1. HEALTHY NUTS & OATS ENERGY LADOO/COOKIES FOR KIDS

Priyanka Desai loves to prepare these Nuts and Oats energy ladoos for her daughter as these have the goodness of oats as well as nuts, which are rich in protein, fiber, carbs, and other essential nutrients. Besides, these are perfect evening snacks to satiate the hunger pangs of kids. Here is her healthy and delicious recipe-
INGREDIENTS-
· 1 cup Oats
· 1 cup Dates (Seedless), if isn't available, Jaggery can be used as a substitute
·
Honey
for binding
·
Ghee
·
1 tsp
Cardamom powder (optional)
·
Nuts-
Almond & Walnut (5 each)
INSTRUCTIONS-
- Roast Oats till it becomes crunchy
- Add the roasted oats along with dates in a grinder to make a smooth mixture
- Finely chop the nuts and keep aside
- Take a bowl, add the oats & dates mixture; add in the chopped nuts; add cardamom powder; honey, little regular oats as a coating....mix them so that it binds well
- Moist your hand with little ghee and start making small balls /cookie shapes out of it
- After a while slowly keep the ladoos in an airtight container to store them.
2. TRIPLE CHOCOLATE CHIP COOKIES
Sydney Delong is a certified pastry chef who loves to bake cookies for her growing son. Loaded with carbs, proteins, fiber, calcium, iron, etc, the homemade cookies are just right for toddlers ( though adults enjoy them too!) Check out the recipe-
Triple Chocolate Chip Cookies |
INGREDIENTS-
½ cup brown sugar packed
1 stick butter softened
4 oz cream cheese softened
1 egg
1 teaspoon vanilla
1 ½ cup flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup white chocolate chips
¾ cup milk chocolate chips
¾ cup dark chocolate chips
INSTRUCTIONS-
- Beat the sugar, brown sugar, butter, and cream cheese together until smooth and fluffy.
- Add the eggs and vanilla, slowly.
- In a separate bowl, combine the dry ingredients: flour, baking soda, and salt. Slowly add to the sugar and egg mixture.
- Add the chocolate chips.
- Scoop out onto plastic wrap (I divided it into 3 lumps of dough). Cover, and put in the fridge for at least 1 hour.
- Preheat the oven to 350°F.
- Divide the dough into 2 oz portions (or you can use a dough scooper, whatever you prefer). Place on a sheet tray that has been sprayed with cooking spray.
- Bake for 10-12 minutes, or until the edge of the cookie is golden brown. Here you are all set to enjoy Moms' approved tasty recipes.
3. BEETROOT PACHADI

INGREDIENTS-
2 cup
beetroot
3/4 cup water
1tsp salt
1/2 cup coconut
grated
3/4 mustard seeds
1/2 tsp cumin
seeds/jeera
1 chilly
1/2 cup curd
/yoghurt
TEMPERING-
1/2 tsp coconut oil
1 tsp mustard seeds
2 dried red
chilies
Few Curry leaves
INSTRUCTIONS-
1. Take a large Kadai (wok) to add 2 cups grated beetroot and half a cup water followed by
1/2 tsp salt. Mix well and cover it for 10 minutes to boil.
2. Now take a small blender to add 1/2 cup grated coconut, 3/4 mustard seeds, 1/2 tsp cumin seeds, 1 chilly and 1inch ginger. Blend it to a smooth paste adding little water
3. Add this coconut paste to cooked beetroot and mix well. Cook it for 5 to 7 minutes till the aroma of raw coconut disappears.
4. Now, turn off the gas. Add 1/2 cup curd to the paste and mix well till it becomes smooth
5. For tempering, take a small Kadai (wok), add 1/2 tablespoon coconut oil heat in it. Then add 1tsp mustard seeds, 2 dried red chilies and few curry leaves. After the seeds, crackle, pour this tempering over the cooked beetroot.
6. Finally, you
can serve it with steamed rice.
4. NAVRATRI SPECIAL DRY FRUITS KHEER (PUDDING)

For the overall growth of her kids, she makes sure to include veggies, fruits, dry fruits, herbs, etc., in her recipes. Navratri Special Kheer |
A handful of Almonds, Cashews, Raisins, foxnut(Makhane) each
Grated
Coconut - 2 tablespoons
2 tablespoons Cardamom powder
Milk ½ ltr
Fresh Cream (malai) - half cup
Sugar 4 tablespoons
INSTRUCTIONS-
1. Soak raisins in water for 10 mins.
2. Take a kadai and dry roast almonds, cashews, foxnuts, and grated coconut till they get light brown.
3. Let them cool down and prepare a fine powder of a few roasted almonds, cashews, foxnuts with the help of a grinder and manually crush the rest of the nuts.
4. Mix the powder in milk and cook for 2-3mins on low to medium flame, stir continuously.
5. Now add grated coconut and rest of the crushed nuts into the milk.
6. Add cardamom powder into milk.
7. Now cook for another 5-7mins on low to medium flame, stir continuously.
8. Add sugar and fresh cream (malai), then cook for 2 more mins.
9. Your thick and delicious Kheer (Sweet dish) is ready to serve.
10. Serve it hot and garnish it with cut almonds, soaked raisins, and rose petals.
5. HEALTHY PEANUT CHAAT
Boiled peanut-
1.5cup
Boiled potatoes (chopped)-
2 medium
Chopped cucumber- 1/2cup
Chopped onion-
2tbsp
Chopped tomatoes-
2tbsp
Chopped coriander
leaves- 2tbsp
Roasted cumin
powder- 1tsp
Black salt to taste
Salt to taste
Lemon juice- 1/2tsp
Homemade Imly
chutney (tangy sauce)- 2tbsp
Neylon sev- 1/2cup
+ to garnish on top
Pomegranate seeds
to garnish if available
INSTRUCTIONS-
1. Take a bowl add everything in that.
2. Mix properly so that imly Chutney will coat properly.
3. Then serve in small bowls.
4. Garnish with sev and pomegranate seeds.
